Freezing vs Chilling: The Difference

Freezing

Freezing is a process that brings food down to sub-zero temperatures (-7°C to -12°C, or -18°C for meat and fish), generally taking more than 4 hours. Freezing slows down the spoilage process but does not stop it completely. In addition, ice crystals that form in the tissues of foodstuffs can alter their structure and quality.

Unlike freezing, blast chilling is a quick and effective process that rapidly reduces the temperature of food to 3°C in less than 90 minutes.
